Chicken Pot Pie

I found a recipe several years ago in a cookbook of mine and have since adapted it to fit our family’s likes and lifestyle.

Take 2 tablespoons of butter and melt that in a pan. Add 1 cup frozen peas and carrots blend, 2 teaspoons of garlic powder, 1 teaspoon salt, and 1/2 teaspoon of pepper. Add in cubed meat from one rotisserie chicken. Let cook for about 4-5 minutes. Add in 1/4 cup of flour and mix well. Slowly stir in 2 cups of chicken broth. Let come to a boil and then add 1/4 cup of heavy cream. It should look something like this.

Then put into a pie pan or any baking dish of your choice. We’ve used a variety and it never really changes much. Top with your favorite pie crust, brush crust with milk or an egg wash and sprinkle with salt, pepper, and thyme (dried or fresh).

Bake at 400 degrees for about 20 minutes. Then enjoy.
